The tradition of baking small bread loaves gave rise to the bread roll, which has various names across Europe, including bap, bun, and brtchen in Germany or brtli in Switzerland. Made with white wheat flour, warm water, fat, bakers yeast, and salt, these rolls were originally used for breakfast and lunch.

As time passed, the methods of sourdough eventually became incorporated into the traditional 'brtchen' process, causing wheat to decline in its role as the main grain. Initially, spelt flour was combined with different types of soft and strong wheat flours, and eventually it became a standalone ingredient.
